Aix\u00f2 genera una capa protectora que evita que els grans es facin malb\u00e9 massa aviat, encara que el resultat sigui un <strong>caf\u00e8 molt fosc, amarg, fort i amb sabor a cremat<\/strong>.<\/p>\n<p>Sembla que l&#8217;origen del <strong>caf\u00e8 torrefacte<\/strong> es troba a Sud-Am\u00e8rica, on en algunes zones mineres es creia que en afegir sucre a l&#8217;hora de torrar el gra de caf\u00e8 natural, aquest podria protegir-se de l&#8217;oxidaci\u00f3 i es conservaria durant m\u00e9s temps gr\u00e0cies a la seva capa caramel\u00b7litzada.<\/p>\n<p>Per a elaborar-lo, el\u00a0sucre ha d&#8217;afegir-se uns minuts abans de refredar el caf\u00e8, tenint en compte que\u00a0<strong>caramel\u00b7litza als 180\u00b0C<\/strong>\u00a0i que a temperatures superiors es carbonitza.
